A top-line Parisian Bistro
Chez Dumonet Josephine is one of the places I’d definitely rank in top 5 Parisian bistros. It’s nostalgic decoration, their menu consisting of only French food, and the attitude of waiters, the best part of French gastronomy, all of them captivate me. You must try their squab meat
I suggest that you don’t keep your expectations high in these kinds of French bistros. Places like this will serve you sublime French food accompanied with good quality French wine. However, it’s not fair to expect exquisite decor, luxurious wine lists and food of fine dining kind. After all, bistro culture is not about that. Onion soup is so good at Chez Dumonet Bistro Paris. As the onions are boiled well, the smell doesn’t bother you. The melt cheese on top is of very good quality; it’s a French cheese with a high percentage of fat. The bread used in the soup has not fallen into pieces and thus, the soup is not ruined. Although it’s soft, it maintains the integrity of the soup. I really enjoy this national soup of the French. İt’s a good example of how to make simple yet delicious food with so little ingredients.
Squab meat is marvellous. Frankly, I like squab meat the most out of all bird meats. It’s because the meat is fatty and soft at the same time. Therefore, it gives good results, especially with outstanding sauces. So, the squab meat I’ve tastes here is an absolute culinary masterpiece. While the good spicy sauce they pour on top of the leg of the dove makes the experience of this meat hit the top, the meaty parts come out grilled between the thinly sliced potatoes. Biting a piece of meat while eating the crunchy potatoes is one of the best things here in Paris.
Another famous French dish we order is Beef bourguignon, in other words, Burgundy beef stew. It’s made by adding red wine to the slowly cooking meat in iron pots with various vegetables. The better quality meat and wine you add, the better results you have from the dish. I can’t say the beef bourguignon is one of the best of its kind at Chez Dumonet. Sometimes, the acidity of white wines may add sourness to the meat. Unfortunately, that’s the case here, although it’s not that bad. They might have used an old wine, or maybe the acidity of the wine is just high. Normally, it doesn’t taste that sour here. I guess it’s my unlucky day.
