Italian Style Meat Experience
A new style of meat has emerged in the last 10 years in our country: steak. Standing clear of kebabs and shashliks, we’ve got used to this type of meat quickly. In this respect quite good new places have opened in Turkey. Places like Günaydın, Nusr-et, ÖzgürŞef do much better compared to international names abroad. “Keep Calm and Eat Meat” Again, Keep Calm?
I can’t help getting frustrated as I see the picture “Keep Calm and Eat Meat” on the wall. I’m sick and tired of seeing this type of writing everywhere I go. Don’t you think it’s overrated? This has become a part of our lives. Not getting pissed off, I’m waiting for the waiter to arrive with the excitement of tasting the meat here.
Our waiter is Italian in origin as expected; however, he’s been living in London for about 20 years. I kindly tell him to bring us a non-classic meat dish. I emphasise especially that I don’t want fillet steak. I don’t mind eating this tasteless meat at home as it’s easy to prepare and cook. However, I prefer to eat meat more rich in taste outside while someone else is cooking it for me. As a starter, we order Beef Carpaccio. They serve fresh bread just out of oven together with this. Bread is made 100% Italian style and resembles to pizza dough. The outer crust is crunchy and inside it’s so soft. It’s smoking hot. There’s also Tosano olive oil of normal acidity next to it. . The meat of Carpaccio is not thin. They haven’t beaten the meat enough. It’s very soft, yet thicker than pastrami. When chewing in your mouth, you understand it’s not overdone. Parmesan accompanying the meat is of high quality. It’s of a kind that is scraped off from a tire. It’s obvious from the uneven shape of its corners. Some corners look as if they’re scraped off with a spoon.
The first special I try here is TagliataNuda. It’s a beautiful piece from the ribs of beef. As I like undercooked meat, I’ve ordered it undercooked, however the marinade of meat is not that great Therefore, it’s better to have this meat medium or slightly medium cooked. Rich in terms of quality, this meat has its characteristic taste, however it’s ruined due to wrong cooking techniques.
Another dish is Costata del Macellaio. This gorgeous meat cooked with its own fat is served quite tasty and juicy on your table. As they haven’t removed fat parts, there’s no loss of meat taste. Although, I recommend you to remove it while eating. Because, fat begins to become hard as it loses its form with fire. It might disturb you if you try to eat. Spinach is not with cream as we’re used to. It’s fried in olive oil, so they’re still lively. While the outer layer of potatoes is crispy, the inner parts remain soft.
We don’t have a place left in our stomach for a dessert as we’re sill full with meat we’ve had. Except for Nuda, everything is amazing.
